100% Mt Gambier new clone CHARDONNAY, 27yo vines, near Yahl township.
2018 Vintage, hand picked, cold pressed, double fermented on whole LEES, lees stir until TIRAGE. (IE fermented in the same bottle as released.)
Last Ferment in THIS BOTTLE was SIX YEARS AGO.
5 years (minimum) on TIRAGE before release. Dry Style, Zero dosage.
750mL TASTING NOTE
APPEARANCE:
Light golden colour with very fine lasting bubbles and bead. Mineral spring, almond blossom.
AROMA:
Fresh white nectarine-/white peach with custard/-char. Loafs of fresh baked bread yeastiness.
TASTE and TEXTURE:
white nectarine, mineral tonic, lasting fresh brioche, mineral effervescence, bottle age complexity.
